Our Story

The Merc was built on a simple idea: every community deserves a place where people naturally gather.

We're Dan and Jill Morrow, a family of five raising our three children right here in the Coburg community. Because we live here, every decision we make is rooted in creating a place that serves not only our customers, but also our friends, neighbors, and fellow community members.

From the beginning, we've thought of The Merc as an extension of our own home. We love opening our doors, bringing people together, and creating the kind of place where everyone feels comfortable the moment they walk in. Whether you're a regular who stops in every week or you're visiting Coburg for the first time, our hope is that you'll feel like you've been invited over.

The Merc is also a reflection of the things we each love most. Dan has always had a passion for hospitality—crafting great cocktails, searching for unique and hard-to-find whiskeys, and making every guest feel welcome. Jill loves cooking, gathering around the table, and discovering quality ingredients. The market is filled with products she genuinely loves, while the menu is inspired by the fresh, flavorful dishes she wanted to bring to Coburg.

From lunch with coworkers to family dinners, trivia nights, live music, catering, and celebrations, we wanted The Merc to be more than just a restaurant or market. We wanted it to become the living room of our community—a place where conversations linger, celebrations happen, familiar faces become friends, and every visit feels a little like coming home.

Today, The Merc has become exactly what we hoped it would be. Time and again, we've heard people tell us that it's their favorite place to gather and something Coburg had been needing for years. There is no greater compliment than knowing our neighbors have embraced The Merc as their own.
